National Vichyssoise Day

National Vichyssoise Day honors the silky cold soup of pureed leeks, potatoes, onions, and cream, traditionally served chilled. Despite its very French name, the dish as we know it was popularized in the United States by chef Louis Diat at the Ritz-Carlton in New York in the early twentieth century.
